pears<\/strong><\/p>\n<p>&nbsp;<\/p>\n<h2><strong>INGREDIENTS <\/strong>(serves 2 people)<\/h2>\n<p><strong>For the venison chops with apple sparkling wine<\/strong><\/p>\n<p>\u2022 <a href=\"https:\/\/cerfrouge.ca\/\" target=\"_blank\" rel=\"noopener noreferrer\">2 venison chops (1 per person)<\/a><br \/>\n\u2022 1 tsp. no-salt seasoning mix<br \/>\n\u2022 2 sprigs thyme<br \/>\n\u2022 30 ml (2 tbsp.) oil<br \/>\n\u2022 30 ml (2 tbsp.) brandy<br \/>\n\u2022 200 mll (4\/5 cup) apple sparkling wine<br \/>\n\u2022 Salt and pepper<\/p>\n<p><strong>For the aromatic garnish<\/strong><\/p>\n<p>\u2022 \u00bd stalk celery, diced<br \/>\n\u2022 \u00bd carrot, diced<br \/>\n\u2022 2 grey shallots, chopped<br \/>\n\u2022 1 apple, sliced<br \/>\n\u2022 \u00bd yellow pepper, diced<br \/>\n\u2022 \u00bd leek (white part only), thinly sliced (2.5 inches long)<\/p>\n<p><strong>For the caramelized pears<\/strong><\/p>\n<p>\u2022 2 quartered hard pears (not too ripe)<br \/>\n\u2022 50 ml (3.5 tbsp.) apple sparkling wine<br \/>\n\u2022 30 g butter<br \/>\n\u2022 2 tsp. sugar<br \/>\n\u2022 A pinch of salt<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>DIRECTIONS<\/strong><\/h2>\n<p><strong>Chops and vegetables<\/strong><\/p>\n<ol>\n<li>On a large plate, sprinkle the chops with your seasoning mix.<\/li>\n<li>Oil the chops, add the thyme and let stand 30 minutes.<\/li>\n<li>In the meantime, prepare the aromatic garnish that will infuse the meat with flavour.<\/li>\n<li>Pour the oil into the bottom of a saucepan and sear the chops 2 minutes on each side to medium doneness.<\/li>\n<li>Smoke the meat (optional), then set aside on a separate plate.<\/li>\n<li>In the same saucepan you used for the meat, add the garnish and saut\u00e9 the vegetables 1 minute over high heat.<\/li>\n<li>Flamb\u00e9 the mixture with brandy (optional).<\/li>\n<li>Deglaze the vegetables with the apple sparkling wine.<\/li>\n<li>Reduce gently and set aside for plating.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Caramelized pears<\/strong><\/p>\n<ol>\n<li>Melt the butter and make it bubble.<\/li>\n<li>Add the quartered pears and turn them regularly until they turn golden.<\/li>\n<li>Add the sugar, the apple sparkling wine and a pinch of salt.<\/li>\n<li>Continue turning the pears until obtaining a caramel from the apple sparkling wine and sugar reduction.<\/li>\n<li>Once the pears are caramelized, prepare the plate arrangement.<\/li>\n<li>Next, reheat the chops in the vegetable mixture.<\/li>\n<li>Place a small dome of the vegetable garnish in the centre of your plate.<\/li>\n<li>Place the chop on top.<\/li>\n<li>Glaze the chops with the pear caramel and gently arrange the fruit around the plate for a beautiful presentation.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Enjoy!<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\"
