{"id":14092,"date":"2022-01-10T10:55:30","date_gmt":"2022-01-10T15:55:30","guid":{"rendered":"https:\/\/www.legroupemaurice.com\/?p=14092"},"modified":"2025-03-13T10:46:52","modified_gmt":"2025-03-13T14:46:52","slug":"venison-risotto-with-smoked-slab-bacon","status":"publish","type":"post","link":"https:\/\/www.legroupemaurice.com\/en\/articles\/venison-risotto-with-smoked-slab-bacon\/","title":{"rendered":"Venison risotto with smoked slab bacon"},"content":{"rendered":"<p><strong>Venison risotto with smoked slab bacon<\/strong><\/p>\n<h2>INGREDIENTS (for 8 to 10 servings)<\/h2>\n<ul>\n<li>2\u00a0cups (500\u00a0ml) arborio rice<\/li>\n<li>1\u00a0cup (250\u00a0ml) white wine<\/li>\n<li>2\u00a0tsp. olive oil<\/li>\n<li>\u00bd leek, white part only, thinly sliced<\/li>\n<li>1 pinch of salt<\/li>\n<li>1\u00a0cup (250\u00a0ml) hot chicken broth<\/li>\n<li>1\u00a0kg <a href=\"https:\/\/cerfrouge.ca\/\" target=\"_blank\" rel=\"noopener noreferrer\">venison (inside round)<\/a>, in approximately 3\u00a0cm cubes<\/li>\n<li>1\u00a0kg slab bacon (see your butcher), in approximately 1\u00a0cm cubes<\/li>\n<li>1\u00a0leek, thinly sliced<\/li>\n<li>2\u00a0cups mushrooms, sliced as desired<\/li>\n<li>2 knobs of butter<\/li>\n<\/ul>\n<p><strong>To finish the dish<\/strong><\/p>\n<ul>\n<li>2\u00a0cups (500\u00a0ml) 18% cream<\/li>\n<li>Parmigiano Reggiano cheese, aged 36 months, grated, to taste<\/li>\n<li>Freshly ground pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2>DIRECTIONS<\/h2>\n<ul>\n<li>In a large pot, heat the olive oil and sweat the leek.<\/li>\n<li>Add the rice and cook for one minute, stirring to coat well. Add the white wine and reduce until almost completely evaporated.<\/li>\n<li>Over medium heat, add the broth, stirring frequently, until the liquid is completely absorbed. Season with salt.<\/li>\n<li>Cook for about 10 minutes or until the rice is al dente. Set aside.<\/li>\n<li>In a heavy-bottomed Dutch oven, saut\u00e9 the venison, bacon and mushrooms. Cook for 5 minutes and add to the risotto.<\/li>\n<li>Finish cooking the rice by adding the cream and cheese. Stir over low heat for 10 minutes.<\/li>\n<li>At the very end, season with salt after tasting, since the bacon and cheese are already salty.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Enjoy
