Alice used to serve us her tourti\u00e8re every Christmas Eve until she passed away. Now I carry on this tradition, and my kids say Christmas wouldn\u2019t be as magical without Alice\u2019s tourti\u00e8re.&#8221; &#8211; Claude Savard, Vice-President, Information Technology<\/strong><\/p>\n<p>&nbsp;<\/p>\n<h2>Lac-Saint-Jean tourti\u00e8re<\/h2>\n<h2>INGREDIENTS<\/h2>\n<ul>\n<li>900 g (2 lb or 4 cups) top sirloin steak, cubed (1 cm or \u00bd inch)<\/li>\n<li>900 g (2 lb or 4 cups) boneless chicken thighs, cubed (1 cm or \u00bd inch)<\/li>\n<li>900 g (2 lb or 4 cups) pork tenderloin, cubed (1 cm or \u00bd inch)<\/li>\n<li>200 g salt pork, very finely chopped<\/li>\n<li>3 large yellow onions, chopped<\/li>\n<li>Salt and pepper<\/li>\n<li>12 cups white potatoes, cubed (1 cm or \u00bd inch)<\/li>\n<li>6 cups homemade or store-bought chicken broth<\/li>\n<li>2 homemade or store-bought pastry crusts<\/li>\n<li>1 egg white<\/li>\n<\/ul>\n<h2>DIRECTIONS<\/h2>\n<ul>\n<li>Preheat oven to 350\u00a0\u00b0F.<\/li>\n<li>Use a 16 x 4 \u00bd inch granite oval roaster.<\/li>\n<li>In the roaster, mix the steak, pork, chicken, salt pork and onion.<\/li>\n<li>Add salt and pepper.<\/li>\n<li>Cover and refrigerate for 4 hours.<\/li>\n<li>Add the potatoes to the meat mix and mix in well.<\/li>\n<li>Transfer the meat and potato mixture into 2 mixing bowls.<\/li>\n<li>In a pot, bring the chicken broth to a boil.<\/li>\n<li>Completely cover the inside of the roaster with 1 pastry crust.<\/li>\n<li>Pour the meat and potato mixture into the roaster.<\/li>\n<li>Slowly pour in the hot chicken broth until it reaches the top of the mixture.<\/li>\n<li>Cover with the other pastry crust.<\/li>\n<li>With a brush, spread the egg white over the dough.<\/li>\n<li>Fold the edges of the pastry crust.<\/li>\n<li>Cover and cook for 1 hour at 350\u00a0\u00b0F.<\/li>\n<li>After 1 hour, remove the roaster and gently tilt it from side to side to mix the broth.<\/li>\n<li>Using an injector, remove half a cup of broth.<\/li>\n<li>Check the broth for seasoning and add salt if needed. Put the broth back inside the tourti\u00e8re with the injector.<\/li>\n<li>Gently tilt the roaster from side to side to mix the broth.<\/li>\n<li>Cover and put back into the oven for 1 hour.<\/li>\n<li>Remove the roaster and gently tilt it from side to side to mix the broth.<\/li>\n<li>Using an injector, remove half a cup of broth.<\/li>\n<li>Check the broth for seasoning and add salt if needed.
