To mark the occasion, a poutine bar will pop up in every residence, treating everyone\u2019s taste buds. And to keep the goodness going, we\u2019re glad to share with you a special poutine recipe for <\/strong><strong>four<\/strong><strong>, <\/strong><strong>created<\/strong><strong> by Charles-F\u00e9lix Duclos, head chef at <a href=\"https:\/\/www.legroupemaurice.com\/en\/residences\/le-notre-dame\/\" target=\"_blank\" rel=\"noopener\">Le Notre-Dame residence<\/a>. Let\u2019s get cooking!<\/strong><\/p>\n<p>&nbsp;<\/p>\n<h2>Sweet Potato and Braised Beef Poutine Recipe<\/h2>\n<h3>INGREDIENTS<\/h3>\n<ul>\n<li>3 sweet potatoes<\/li>\n<li>3g (<sup>1\/2<\/sup> tsp) cornstarch, or more to taste<\/li>\n<li>400g (2 cups) Oka cheese curds or other semi-firm cheese, cut into cubes<\/li>\n<li>226g (<sup>1\/2<\/sup> lb) beef short ribs<\/li>\n<li>1 onion<\/li>\n<li>2 cloves garlic<\/li>\n<li>2L (8 cups) beef broth<\/li>\n<li>250ml (1 cup) red wine<\/li>\n<li>10g (1 tbsp) cornstarch<\/li>\n<li>15g (1 tbsp) BBQ sauce<\/li>\n<\/ul>\n<ul>\n<li>Salt and pepper to taste<\/li>\n<li>Assorted microgreens (radish, coriander, peas, etc.) usually found with lettuce in grocery stores\u00a0\u2013\u00a0optional<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>PREPARATION<\/h3>\n<h4>For the meat and sauce:<\/h4>\n<ol>\n<li>In a hot skillet, sear the meat on both sides.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Chop the onion and garlic, then saut\u00e9 with the meat.<\/li>\n<li>Remove the meat from the skillet to deglaze.<\/li>\n<li>Deglaze with red wine, scraping with a spatula to release the juices.<\/li>\n<li>Add beef broth, return the meat to the skillet, cover and simmer on low for about 3\u00a0hours until the meat is tender.<\/li>\n<li>Remove the meat and set aside.<\/li>\n<li>Strain the cooking juices to remove the vegetables.<\/li>\n<li>Add BBQ sauce and adjust seasoning to taste.<\/li>\n<li>If needed, thicken the sauce with a little cornstarch mixed with cold water. Set aside.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h4>For the sweet potato fries:<\/h4>\n<h5><strong>Deep-fried<\/strong><\/h5>\n<ol>\n<li>Peel and cut the sweet potatoes into fries. Rinse thoroughly in cold water, drain and pat dry. Dust with cornstarch.<\/li>\n<li>In a deep fryer, heat the oil to 190\u00b0C (375\u00b0F). Cook the sweet potato fries for a few minutes until golden and crispy.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h5><strong>Or baked<\/strong><\/h5>\n<ol>\n<li>Preheat the oven to 230\u00b0C (450\u00b0F) and place a non-stick baking sheet inside.<\/li>\n<li>Peel and cut the sweet potatoes into fries. Rinse, drain and pat dry. Dust with cornstarch and lightly brush with olive oil.<\/li>\n<li>Remove the baking sheet from the oven and arrange the sweet potato fries on it.<\/li>\n<li>Bake the fries for at least 20\u00a0minutes, until golden. Then flip them with a spatula and continue baking for 10\u00a0minutes.<\/li>\n<li>Drain the fries on paper towels and adjust the seasoning to taste.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>*<\/em><em>Sweet potatoes can also be cooked in an air fryer.<\/em><\/p>\n<p>&nbsp;<\/p>\n<h4>Presentation:<\/h4>\n<ol>\n<li>Place fries in a shallow dish and top with cheese.<\/li>\n<li>Drizzle with sauce.<\/li>\n<li>Add the meat on top.<\/li>\n<li>Add extra cheese and sauce to taste.<\/li>\n<li>Garnish with your choice of microgreens and devour!<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>A big thank you to Charles-F\u00e9lix for his delicious poutine recipe.
