Created by Hector Martinez, Food Services Chef at <\/strong>Cib\u00e8le<\/strong><\/a><\/span>, this recipe celebrates the simple pleasures of seasonal flavours. A deliciously warming dish that reflects the chef\u2019s talent, it\u2019s just one example of his culinary expertise. Hector will also be representing Le Groupe Maurice at the RQRA\u2019s <\/strong>2026 Chefs\u2019 Challenge<\/strong><\/a><\/span>.<\/strong><\/p>\n

Ingredients<\/h2>\n

Roasted Butternut Squash Soup<\/h3>\n
    \n
  • 1 butternut squash<\/li>\n
  • 1 medium onion<\/li>\n
  • 4 garlic cloves<\/li>\n
  • 30\u00a0ml (2 tbsp) regular olive oil<\/li>\n
  • 4\u20135 sprigs fresh thyme<\/li>\n
  • 500\u00a0ml (2 cups) chicken stock<\/li>\n
  • 60\u00a0ml (\u00bc cup) 35% heavy cream<\/li>\n
  • 30\u00a0g (2 tbsp) butter<\/li>\n
  • 1 pinch of salt<\/li>\n
  • 1 pinch of pepper<\/li>\n<\/ul>\n

    Grilled Cheese Sandwich<\/h3>\n

    • 2 slices of white or multigrain bread<\/li>\n
    • 2\u20133 slices of Swiss cheese<\/li>\n
    • 15\u00a0g (1 tbsp) butte<\/li>\n<\/ul>\n

      Finishing touches<\/h3>\n

      • 15\u00a0ml (1 tbsp) 35% heavy cream<\/li>\n
      • A few drops of regular olive oil<\/li>\n
      • A few microgreens or fresh herbs of your choice<\/li>\n<\/ul>\n

        Preparation<\/h2>\n

        Squash Soup<\/h3>\n
          \n
        1. Preheat the oven to 180\u00b0C (355\u00b0F).
          \n2.<\/strong> Wash the butternut squash and cut it in half. Halve the onion and add the garlic cloves.
          \n3.<\/strong> Arrange everything on a baking sheet. Drizzle with olive oil and season with salt, pepper and fresh thyme.
          \n4.<\/strong> Roast for 60\u201390 minutes, or until the vegetables are tender and caramelized.
          \n5.<\/strong> Remove the squash skin and scoop out the roasted flesh.
          \n6.<\/strong> Transfer the squash, onion and garlic to a blender. Gradually add the chicken stock and blend until smooth and velvety.
          \n7.<\/strong> Stir in the cream, adjusting the consistency with a little more chicken stock as needed.
          \n8.<\/strong> Add a few cubes of cold butter and blend again for a richer, creamier texture and a silky finish.
          \n9.<\/strong> Adjust the seasoning to taste.<\/li>\n<\/ol>\n

          Grilled Cheese Sandwich<\/h3>\n

          1. Butter both sides of the bread slices.
            \n2.<\/strong> Layer the Swiss cheese between the slices to make the sandwich.
            \n3.<\/strong> Grill in a skillet over medium heat until golden and crispy, with the cheese melted.<\/li>\n<\/ol>\n
