Chicken Enchilada Bowls

 

INGREDIENTS (serves 4)

 

To prepare the Mexican rice

  • 1 cup parboiled rice
  • 1½ cups water
  • ½ cup tomato juice
  • 1 tbsp Mexican chili powder
  • 2 tbsp vegetable oil
  • Salt and pepper

 

To prepare the enchiladas

  • ½ Spanish onion, diced
  • ½ green pepper, diced
  • 2 chicken breasts, diced
  • 1 tbsp vegetable oil
  • 3 tbsp sour cream
  • 1½ tbsp Mexican chili powder
  • 2 tbsp fresh cilantro
  • 1 clove garlic
  • 60 gr (¼ cup) Tex-Mex cheese
  • Salt and pepper

 

To prepare the bowls

  • ½ iceberg lettuce, chopped
  • 1 avocado, thinly sliced (¼ per bowl)
  • 60 gr (¼ cup) fresh cheese
  • Cilantro

 

To prepare the pico de gallo

  • 2 Italian tomatoes, diced
  • ½ red onion, diced
  • 2 tbsp cilantro, chopped
  • ½ tbsp fresh lime juice
  • Salt and pepper

 

DIRECTIONS

  • For the Mexican rice
    • In a pan, heat the oil and add the chili powder.
    • Add the water, tomato juice and seasonings.
    • Bring to a boil.
    • Incorporate the rice and mix with a wooden spoon.
    • Cover and simmer on low heat for 10 minutes.
    • Remove from heat and let rest for 5 minutes.
    • Transfer to a salad serving bowl.

 

  • For the enchilada mixture
    • Heat the vegetable oil in a pan.
    • Add the chicken and cook on both sides until golden brown.
    • Add and mix the onion, pepper, garlic and chili powder.
    • Incorporate the sour cream and simmer for 3 to 5 minutes.
    • Remove from heat and add the cheese and fresh cilantro.
    • Season to taste.

 

  • For the pico de gallo
    • Mix all of the ingredients in a bowl and season. Set aside.

 

ASSEMBLING THE BOWLS

  • Place four salad bowls on your work surface.
  • Place an equal amount of chopped iceberg lettuce in each bowl.
  • Spoon the warm Mexican rice over the lettuce, followed by the chicken enchilada mixture.
  • Top with the fresh cheese, avocado slices and pico de gallo. Finish with a touch of fresh cilantro.
