Queen Elizabeth cake



  • 1 cup water
  • 1 cup pitted dates, chopped
  • ½ tsp baking soda
  • 1¾ cups flour
  • 1½ tsp baking powder
  • ½ cup butter
  • ¾ cup brown sugar
  • 2 eggs



  • ½ cup 35% cream
  • ½ cup softened butter
  • 1½ cups brown sugar
  • 1½ cups shredded coconut  



  • Line a 10-inch springform pan with parchment paper and butter the sides.


  • Put the water, dates and baking soda in a saucepan and bring to a boil. Simmer for 3 minutes and then let cool.


  • Mix the flour, baking powder and salt.


  • Cream the butter with the brown sugar.


  • Add the eggs one at a time and beat until the mixture is creamy and homogeneous.


  • Gradually add the dry ingredients, alternating with the date puree.


  • Bake at 350 °F for 25 to 30 minutes.


  • For the icing, bring all the ingredients to a boil. Let simmer for 2 minutes. Spread on the cake as soon as you take it out of the oven.
