Queen Elizabeth cake
INGREDIENTS
- 1 cup water
- 1 cup pitted dates, chopped
- ½ tsp baking soda
- 1¾ cups flour
- 1½ tsp baking powder
- ½ cup butter
- ¾ cup brown sugar
- 2 eggs
Icing
- ½ cup 35% cream
- ½ cup softened butter
- 1½ cups brown sugar
- 1½ cups shredded coconut
DIRECTIONS
- Line a 10-inch springform pan with parchment paper and butter the sides.
- Put the water, dates and baking soda in a saucepan and bring to a boil. Simmer for 3 minutes and then let cool.
- Mix the flour, baking powder and salt.
- Cream the butter with the brown sugar.
- Add the eggs one at a time and beat until the mixture is creamy and homogeneous.
- Gradually add the dry ingredients, alternating with the date puree.
- Bake at 350 °F for 25 to 30 minutes.
- For the icing, bring all the ingredients to a boil. Let simmer for 2 minutes. Spread on the cake as soon as you take it out of the oven.
