Vegetable and Halloumi Cheese Skewers

Vegetable and Halloumi Cheese Skewers

 

INGREDIENTS (serves 4 people)

  • 200 gr halloumi cheese
  • 1 orange bell pepper
  • 1 zucchini
  • 12 cherry tomatoes
  • 1 red onion

 

MARINADE FOR THE CHEESE AND VEGETABLES

 

DIRECTIONS

  • Cut the cheese into 2.5-cm cubes.

 

  • Mix the cheese, BBQ spice mix and 1 tsp (15 ml) of olive oil. Let marinate for 2 hours.

 

  • Cut the bell pepper, zucchini and onion into cubes. Place in a bowl with the rest of the oil, the balsamic vinegar and sugar. Add salt and pepper to taste and let marinate for 2 hours.

 

  • Skewer the ingredients, alternating between a piece of pepper, zucchini, tomato, cheese and onion. Repeat three times per skewer.

 

  • Grill on the BBQ, 3 minutes on each side.

 

If you prefer, you can replace the cheese with the meat of your choice. Let marinate for 8 hours in a meat marinade (see below) and skewer as described above.

Chef’s tips

The acids in the marinade will tenderize the meat. However, if you add salt, it will toughen the meat, which is counterproductive! Add salt after the meat has been cooked.
